After a thorough renovation carried out recently, the new Lasarte restaurant surprises with its much more modern and avant-garde appearance with more spacious and brighter spaces. The emphasis on light, the predominant textures of oak wood and the selection of furniture were the main basis of the whole project to give the restaurant a unique personality.

In its elegant restaurant overlooking a quiet garden, it offers guests a unique gastronomic experience that constantly evolves according to the ingredients of changing seasons. These are always combined with his technical ability as he revisits Mediterranean flavors with a nod to influences from elsewhere in the world. 

The experience here, which begins with appetizers in the kitchen, is centered on a unique tasting menu offering new recipes alongside the restaurant’s renowned iconic dishes (such as her “garlands of sun-dried tomatoes with herb bread and parmesan textures”). A complex dish that completely took us by surprise was  «burnt roots, seeds and bark, with chervil ice cream, smoked scamorza cheese and candied truffles», inspired by the wood ravaged by fire.

This chef’s passion for cooking was awakened very early. At the age of 12, he began his career at the family tapas bar, where he learned traditional cuisine. He then followed studies and once his studies finished, he completely focuses on the world of gastronomy. 

This restaurant serves highly nuanced Mediterranean cuisine, enriched with international influences and an occasional nod to Asian fusion cuisine.
